Have you done a pressure test on the coolant system? Is coolant disappearing?

When you bleed the system with a funnel, so you see it flowing at all?

You shouldn't run without a thermostat or restrictor plate, that can cause all kind of problems and tuning annoyances including even worse overheating in some cases. Race cars that don't run a thermostat will still run a restrictor plate to allow the cooling system to be able to build pressure easier(water boils at high temps at high pressure) and to keep from causing any "short circuits" in the cooling system.
