You should get a fuel pressure gauge on there, that is the second most useful gauge for tuning besides a wideband. It's easy to cover up fuel pressure issues in a tune on purpose or accident and hard tell when it's happening. More advanced standalones and many of the Ford ECUs use a fuel pressure input also to be able to modify fuel injector pulse width to compensate for non-linear fuel pressure problems.
Are you running a single or dual pump system now? What you are describing often happens when 1 pump in dual pump setup fails.
