Just wondering what I should see for a oil temp that would be normal. Temp probe is on supply line of oil cooler.

Well the 90 oil cooler has a thermostat set around 180*F, The rest of use use coolant to cool, 195-220 I would imagine. My car, with out an oil cooler runs 190*F after a 20 mile freeway trip, not a cold start either.
