I'm thinking your fine and the stock gauge is screwed up. I would go off of what AEM is telling you over your stock gauge. Do you have or know of a aftermarket temp gauge you could throw in quick just to test it? If I remember correctly idle temp on a 1g is normally 210ish on a hot day. My motor runs 210-215 on average at idle in warm weather. I'd rather have it around there so I know the moisture is all boiled out of the oil. Up around 230+ in this weather is when you have to start worrying. My $.02~
Edit: Having the AFC in the +++ range in the upper RPM's would mean your flowing more than stock air flow at that RPM so your probably hitting a mild fuel cut. Think of 0 being stock. 650cc injectors are quite a bit larger so there for you have to subtract the air coming in to lean out the car. Your numbers should be in the -35% range to get ya started.
