While the engine is out...

So today i am paying for the transmission to get back from Dogbox Racing and i got to thinking.
While my engine is out and sitting in the garage with the head off. is there some things i should check?
Its a 6bolt with 2g pistons, stage two port on the head.

Check for abnormal wear on the cylinder walls. Not much else to look at.

Scoring on the walls or excessive wearing on the cylinder walls on the sides where the intake and exhaust manifolds mate to the head. You normally need a light close by/on it to see the difference.

Wouldn't be a bad time to clean the engine bay, spray the block, or remove unwanted hoses, etc.

Already did that, I sprayed the entire engine bay, Took off that padding on the firewall. took out some of the hoses that were not needed. I also copper sprayed the Head gasket (5 layer evo 3) Copper sprayed the Turbo to manifold gasket (stainless steel 7mm) and a couple other parts.
Overall the engine is almost fully assembled on the engine stand. (Although i am kinda scared at the fact that the engine stand says Max cap of 750 lbs... i think im over that by a lot)

I know it's common practice to do this, but with a multi-layer head gasket - it's said that you shouldn't. Since the head is aluminum and the block is steel, they expand at differing rates. If the head gasket is adhered to both the block and head, it has a greater chance to blow.
