I'll be driving and randomly, the car will bog way down, like going 10 mph and throwing it in 5th kind of boggy, the check engine light comes on, no build in boost, flooring it will do nothing to the RPMs, and if I turn it off and try to turn it back on, it grinds and dies pretty much immediately.

After like 10-30 seconds it will go completely back to normal, if I have it floored trying to keep the RPMs up, it will build boost immediately and take off like a rocket. There is no build up back to normal, just check engine light shuts off and bam, instant power.

It will happen randomly, and it's bone stock. It has no tune, no aftermarket parts, nothing.

The first step would be figuring out what the CEL is on for.

It's only on when it bogs down, then it disappears and the car returns to normal.

Any major maintenances performed recently?

Check battery terminals.

my buddies evo was doing this same crap last year but has been on jackstands since, so hopefully you can find the cause and I can relay to him :D

No major maintenance was done recently, no. It's done it since I got it a couple months ago.

Need to log it somehow. Check out your knock sensor circuit.
