my ecu must have been replaced before and looks super clean, I don't think that is the issue.

well my car was somewhat doing the same thing check your maf
i swithed mine to a gm maf and it changed the way my car ran

if the check engine light doesn't come on, then its the ecu.

If it's the MAF, it will run with it unplugged, just not very well.
