I have someone who wants to buy my talon, He's in Canada and wants to come down and get it. Does anyone know how international title transfers work? I'm mostly looking for a way to be best protected if the potential owner doesn't transfer the title after he is back in Canada.

Create documentation. Have him sign and date something that said he purchased the car. Check his name and address, write that down. Take a picture of the title and him. Anything to cover you ass. He should be fine with you doing this, unless he's looking to screw you.
Just send in the little corner of the title that you keep. You are supposed to send it in to cover just that problem, but few people do. I tried to buy a 98 talon from canada once, what a bitch. I couldn't get them to sign off on it, maybe it is easier the other way around.

Yep, Jet's right. Just send in the corner of the title and you're covered. It's a lot easier to send up there than it is to import.
You can go online too instead of mailing in that corner of the title.

I found out that Canada does not even use titles like we do in the states. They need a bill of sale and the title to have a transportation permit issued. And once that is issued, the existing US state title is voided.
